Ingredients

  • ½ cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • ½ tsp baking soda
  • 1 tbsp cinnamon
  • ¼ cup butter, room temperature
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a large mixing bowl, combine the eggs, honey, shredded carrots, softened butter, and vanilla extract. Beat until well combined.
  4. In another bowl, mix together the oats, baking soda, and cinnamon.
  5. Fold the dry mixture into the wet ingredients until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
