Description

A vibrant and festive cake decorated with colorful layers and adorable marshmallow bunnies, perfect for Easter celebrations.


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 3 large eggs, room temperature
  • 1 cup buttermilk or whole milk
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Pink, yellow, and blue gel food coloring
  • 2 cups unsalted butter (for frosting), softened
  • 8 cups powdered sugar
  • 1 tablespoon vanilla extract (for frosting)
  • 1/2 teaspoon salt (for frosting)
  • 1/3 cup heavy cream
  • 24 Bunny Peeps
  • 1 cup sweetened coconut flakes, dyed green
  • Easter M&M’s candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare three 9-inch round cake pans by greasing and flouring them.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the buttermilk and vanilla extract until well combined.
  6. Combine the flour, baking powder, baking soda, and salt in a separate bowl.
  7. Add the dry ingredients to the wet mixture, stirring until just incorporated.
  8. Divide the batter evenly into three bowls and color each with a different gel food coloring.
  9. Bake in the prepared pans for 25-30 minutes or until a toothpick comes out clean.
  10. Cool the cakes in the pans for 10 minutes before transferring to a wire rack to cool completely.
  11. Make the frosting by beating the softened butter until creamy, and gradually adding the powdered sugar, vanilla extract, and salt, followed by the heavy cream.
  12. Assemble the cake by layering the colored cakes with frosting in between.
  13. Frost the top and sides of the cake with the remaining frosting.
  14. Decorate with dyed coconut flakes, Bunny Peeps, and Easter M&M’s.
  15. Slice and serve to enjoy the delicious layers!

Notes

Make sure to let the cake cool completely before frosting to prevent melting the frosting. Feel free to get creative with decorations to suit your Easter theme!
