  • 1 ½ teaspoons baking powder
  • ½ teaspoon vanilla extract
  • Colorful candy eggs (such as Cadbury Mini Eggs)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then pour in the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  5. Divide your batter into separate bowls and add food coloring to create your desired pastel shades.
  6. Scoop a tablespoon of each colored batter into the greased muffin pan, placing a candy egg in the center of each scoop.
  7. Bake for about 12-15 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the mini cakes cool in the pan for about 5 minutes before transferring them to a wire rack. Dust with powdered sugar before serving.
