High-Protein Pancake Sausage Mini Muffins

Description

A delightful combination of pancakes and breakfast sausage in mini muffin form, packed with protein and flavor.


Ingredients

  • 2 cups Kodiak pancake mix (or other protein pancake mix)
  • 1 lb ground sausage, browned and crumbled
  • 2 cups milk (try Fairlife for extra protein)
  • 2 large eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby Jack)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a mini muffin tin with non-stick spray or line with muffin liners.
  3. In a skillet over medium heat, crumble and brown the ground sausage for 6-8 minutes, then drain and set aside.
  4. In a large bowl, whisk together the milk, eggs, and maple syrup until smooth.
  5. In another bowl, whisk together the pancake mix.
  6. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  7. Fold in the cooked sausage and shredded cheese.
  8. Scoop the mixture into the muffin tin, filling each cup about ¾ full.
  9. Bake for 12-15 minutes or until a toothpick comes out clean.
  10. Let cool for 5 minutes before transferring to a wire rack.

Notes

These muffins can be made ahead of time and frozen for later use.
