Ingredients

- ¾ cup Greek yogurt (150 grams)
- 1 ½ tablespoon extra virgin olive oil
- 1 ½ tablespoon lemon juice
- ¼ teaspoon garlic, grated
- ½ teaspoon fine salt
- ⅕ teaspoon black pepper
- 1 ½ lb (670 grams) cucumbers, sliced
- ½ red onion, finely sliced
- ¼ cup fresh dill, chopped
Instructions
- Prep the Cucumbers: Wash cucumbers under cool water, slice thinly (about ¼ inch thick).
- Slice the Onion: Finely slice the red onion. Soak in cold water for 10-15 minutes if desired.
- Mix the Dressing: In a medium bowl, combine Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper. Stir until smooth.
- Combine Ingredients: Toss cucumber, onion, and dill in a large bowl. Drizzle dressing and fold gently.
- Chill Out: Let sit in the fridge for at least 30 minutes before serving.
