Ingredients
Chili:
1.25 lb boneless, skinless chicken breasts
2 (14.5 oz) cans white beans, drained and rinsed
4 cups chicken broth
1 cup chopped yellow onion
2 cloves garlic, chopped
1 tsp salt
1½ tsp dried oregano
¾ tsp dried thyme
1 tbsp ground cumin
Toppings:
Lemon wedges
Avocado slices
Greek yogurt
Chopped red onion
Fresh dill
Crumbled feta
Crushed red pepper flakes
Instructions
Add chicken breasts, white beans, broth, onion, garlic, salt, oregano, thyme, and cumin into a crockpot.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is fully cooked and tender.
Remove the chicken, shred it using two forks, and return it to the pot. Stir well.
Serve warm with your choice of toppings like a squeeze of lemon, creamy avocado, a dollop of Greek yogurt, and a sprinkle of feta.
