Ingredients

2 lbs boneless, skinless chicken breasts or thighs

1 small onion, chopped

3 cloves garlic, minced

1½ cups wild rice blend (uncooked)

4 cups low sodium chicken broth

1 tsp dried thyme

1 tsp dried rosemary

1 tsp dried parsley

½ tsp black pepper

½ tsp kosher salt

4 tbsp salted butter, cubed

Finishing Touch:

½ cup heavy cream or canned full-fat coconut milk

½ cup grated Parmesan cheese (optional)

Fresh herbs for garnish (like thyme or parsley)


Instructions

In the crockpot, combine chicken, onion, garlic, wild rice, broth, thyme, rosemary, parsley, salt, and pepper. Top with butter cubes.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and rice is cooked.

Shred or chop chicken, then stir in cream and Parmesan. Let sit for 5–10 minutes on warm to thicken.

Taste and adjust salt. Garnish with fresh herbs before serving.
