Ingredients
1.5 lbs boneless, skinless chicken breasts or thighs
1 (15 oz) can corn, drained (or 1.5 cups frozen corn)
1 (15 oz) can creamed corn
3 medium potatoes, diced
1 red bell pepper, diced
1 small onion, chopped
3 cups chicken broth
1 tsp garlic powder
1 tsp paprika
Salt & pepper to taste
1 cup half-and-half or heavy cream
2 tbsp flour (optional, for thickening)
1/2 cup shredded cheddar cheese (optional)
Cooked and crumbled bacon + chopped green onions for garnish
Instructions
Add chicken, corn, creamed corn, potatoes, bell pepper, onion, broth, garlic powder, paprika, salt, and pepper to the crockpot.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
Shred the chicken with two forks and return it to the crockpot.
Stir in cream and flour (if using) to thicken. Add cheese if desired.
Cook for another 20–30 minutes on high until thick and creamy.
Serve topped with bacon and green onions.
