- 1/2 medium onion, finely chopped
- 2 tablespoons taco seasoning
- 2 tablespoons tomato paste
- 1/4 cup water or beef broth
- Salt to taste
- 8 (6 inch) taco size flour tortillas
- 2 to 3 cups mozzarella cheese, shredded
- Avocado or vegetable oil for frying
- Fresh cilantro, finely chopped (garnish)
Instructions
- Prep the Ingredients: Gather and prepare all your ingredients. Chop your onions and measure out the taco seasoning and tomato paste.
- Cook the Beef: Heat a large skillet over medium-high heat. Add your ground beef and onions, breaking the beef apart with a spatula. Cook until the beef is browned and the onions are translucent, about 6-8 minutes. Drain excess fat if needed.
- Season the Filling: Stir in the taco seasoning and tomato paste along with water or broth, and mix well. Let it simmer for about 5 minutes, allowing the flavors to meld.
- Crisp the Tortillas: In a separate pan, heat oil over medium heat. Lightly fry each tortilla for 30-45 seconds on each side until golden and crispy.
- Build the Tacos: Spoon the seasoned ground beef mixture into the crispy tortillas, then sprinkle the shredded mozzarella cheese on top.
- Garnish & Serve: Top with fresh cilantro and any additional toppings you love. Enjoy!
