- 2 boneless, skinless chicken breasts, thinly sliced
- 1/4 cup teriyaki sauce
- 1 tbsp sesame oil (divided)
- 1 tbsp low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 cups coleslaw mix (cabbage and carrots)
- 2 green onions, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp honey
- 12 wonton wrappers
- 2 tbsp sweet chili sauce
- 1 tsp sesame seeds
- 2 tbsp chopped cilantro
Instructions
- Marinate the Chicken: In a bowl, combine the sliced chicken, teriyaki sauce, soy sauce, 1/2 tablespoon sesame oil, minced garlic, and grated ginger. Mix everything until the chicken is well-coated. Let this marinate for at least 30 minutes!
- Prepare Your Wonton Shells: Preheat your oven to 375°F (190°C). Press each wonton wrapper into the cups of a muffin tin to create a taco shape. Spray with cooking oil or brush with the remaining sesame oil.
- Bake the Wontons: Bake for about 7-10 minutes or until golden brown and crispy. Let them cool while you cook the chicken.
- Cook the Chicken: In a large pan, heat the remaining 1/2 tablespoon of sesame oil over medium-high heat. Add the marinated chicken and sauté for about 5-7 minutes, until cooked through.
- Prepare the Slaw: In a medium bowl, combine the coleslaw mix, green onions, rice vinegar, and honey. Toss until mixed.
- Assemble Your Tacos: Fill each wonton shell with cooked chicken and a scoop of slaw. Drizzle with sweet chili sauce and sprinkle sesame seeds and chopped cilantro.
- Serve and Enjoy: Serve immediately with extra lime wedges and sweet chili sauce for dipping.

Use cooking oil for spritzing wonton wrappers to ensure they become crispy. Experiment with different fillings and toppings for variety.
