- 1 cup of cooked chicken breast, shredded
- 1/2 cup of cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup of croutons
- 1/4 cup of shredded cheese (optional)
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions
- Prep Your Chicken: Ensure your chicken is cooked and shredded. Grill or bake it for about 20-25 minutes at 375°F. Shred with two forks.
- Chop the Veggies: Rinse mixed greens, pat dry, and tear into pieces. Slice cucumber, halve cherry tomatoes, and slice red onion.
- Make Your Vinaigrette: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Combine Everything: In a large bowl, toss together chicken, greens, cucumber, tomatoes, and onion. Drizzle vinaigrette and toss.
- Plate and Finish: Serve salad in bowls, top with croutons and cheese, and drizzle more vinaigrette if desired.
