  • Baby Potatoes (sliced ½ inch thick)

  • Salt (to taste)

  • Paprika
  • 1 Dried Rosemary
  • 400 g Cherry Tomatoes
  • 2 tbsp Olive Oil
  • A Whole Garlic Bulb
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon Red Pepper Flakes
  • Fresh Basil Leaves (chopped)
  • ¼ cup Heavy Cream

Instructions

  1. Prep your ingredients: Wash and slice your baby potatoes into half-inch thick slices.
  2. Heat and prepare: Pour frying oil into a large skillet and heat over medium-high heat.
  3. Sear the chicken: Add seasoned chicken to the skillet and sear about 5-7 minutes per side until cooked through.
  4. Cook the potatoes: Remove chicken, add sliced baby potatoes and sauté until they start browning.
  5. Roast the garlic and tomatoes: Toss in the whole garlic bulb and cherry tomatoes into the skillet.
  6. Create the creamy sauce: Add heavy cream and mix in the roasted garlic cloves and blistered cherry tomatoes.
  7. Bring it all together: Return seared chicken to the skillet and let it soak up flavors.
  8. Final touches: Sprinkle freshly chopped basil leaves over the dish before serving.
