- Baby Potatoes (sliced ½ inch thick)
- ¼ cup Frying Oil

- 1 Dried Rosemary
- 400 g Cherry Tomatoes
- 2 tbsp Olive Oil
- A Whole Garlic Bulb
- 1 teaspoon Italian Seasoning
- ½ teaspoon Red Pepper Flakes
- Fresh Basil Leaves (chopped)
- ¼ cup Heavy Cream
Instructions
- Prep your ingredients: Wash and slice your baby potatoes into half-inch thick slices.
- Heat and prepare: Pour frying oil into a large skillet and heat over medium-high heat.
- Sear the chicken: Add seasoned chicken to the skillet and sear about 5-7 minutes per side until cooked through.
- Cook the potatoes: Remove chicken, add sliced baby potatoes and sauté until they start browning.
- Roast the garlic and tomatoes: Toss in the whole garlic bulb and cherry tomatoes into the skillet.
- Create the creamy sauce: Add heavy cream and mix in the roasted garlic cloves and blistered cherry tomatoes.
- Bring it all together: Return seared chicken to the skillet and let it soak up flavors.
- Final touches: Sprinkle freshly chopped basil leaves over the dish before serving.
