- 2 tbsp unsalted butter
- 1 onion (diced)
- 1 lb chicken breast (diced)
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 3 cloves garlic (minced)
- 4 cups chicken broth
- 1 cup long-grain rice
- 1/2 cup heavy cream
- 1 cup Parmesan cheese (grated)
- 2 tbsp parsley (chopped for garnish)
Instructions
- Melt Butter by placing a large, heavy-bottomed pot over medium heat. Add the unsalted butter and let it melt.
- Sauté Onions and Garlic by tossing in the diced onion and sautéing for about 3-4 minutes. Add minced garlic and sauté for another 30 seconds.
- Add Chicken by throwing in the diced chicken breast. Stir well and cook for about 5-7 minutes until browned.
- Season It Up by sprinkling in the Italian seasoning, salt, and pepper. Stir to coat the chicken.
- Add Chicken Broth and Rice by pouring in the chicken broth and bringing it to a gentle boil. Then stir in the long-grain rice.
- Simmer and Cook by covering the pot and letting it simmer on low heat for about 15 minutes.
- Creamy Finish by reducing the heat to low and stirring in the heavy cream and Parmesan cheese until well mixed.
- Garnish and Serve by stirring in chopped parsley, adjusting seasoning if needed, and serving hot.
Notes
Serve straight from the pot for a cozy feel, or serve in bowls topped with extra cream and parsley.
