Ingredients

  • 8 oz bowtie pasta
  • 1 lb boneless, skinless chicken breast
  • 1.5 cups shredded mozzarella cheese
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (optional)

Instructions

  1. Boil a large pot of salted water and cook the bowtie pasta according to package instructions for 8-10 minutes. Drain, reserving 1 cup of pasta water.
  2. Sauté the chicken in 2 tablespoons of olive oil over medium-high heat, seasoning with salt and pepper, for 6-7 minutes on each side until golden brown. Let rest before slicing.
  3. Add minced garlic to the skillet, sautéing for about 30 seconds. Then, drop in the butter and let it melt.
  4. Incorporate 1 cup of heavy cream, letting it simmer for 3-4 minutes, and then add the mozzarella cheese gradually until melted and creamy.
  5. Toss the drained pasta into the skillet, mixing to coat in the sauce. Adjust seasoning with salt and pepper. Optionally, mix in chopped parsley.
  6. Serve in bowls, topped with additional mozzarella and parsley if desired.

Notes

Feel free to substitute bowtie pasta for penne or farfalle. For a variation, add vegetables or herbs like basil and thyme.
