- 8 oz Spaghetti
- 1 lb Chicken Breast, cut into pieces
- 2 tbsp Olive Oil
- 2 cups Heavy Cream
- 4 cloves Garlic, minced
- 1/2 cup Sun-Dried Tomatoes, chopped
- 1/2 cup Grated Parmesan Cheese
- Salt and Pepper, to taste
- Fresh Dill, for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add your spaghetti and cook it according to the package instructions until al dente. Drain the pasta and set it aside, reserving about a cup of that starchy pasta water.
- Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, sprinkling a bit of salt and pepper over them. Cook for about 5-7 minutes until golden brown and cooked through.
- Add Garlic: Once your chicken is cooked, add the minced garlic to the skillet and cook for about 1 minute.
- Make the Sauce: Pour in the heavy cream and let it come to a gentle simmer. Stir in the sun-dried tomatoes and grated Parmesan until the cheese melts into the sauce.
- Combine Pasta & Sauce: Toss the cooked spaghetti into the sauce, stirring to coat the noodles evenly, adding reserved pasta water if needed.
- Garnish & Serve: Plate your pasta and finish with fresh dill and more grated Parmesan if desired. Serve hot.
Notes
Serve with a side salad or garlic bread for a complete meal. Experiment with different herbs or proteins as preferred.
