- 1 pound shrimp, peeled and deveined
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 cup long-grain rice
- 2 cups chicken broth
- Fresh parsley, chopped
- Paprika
- Lemon wedges for serving
Instructions
- Rinse the rice under cold water in a fine-mesh strainer.
- Cook the rice: In a medium-sized saucepan, bring 2 cups of chicken broth to a boil. Add the rinsed rice, stir, cover, and reduce heat to low. Let it simmer for about 18-20 minutes.
- Sauté the shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp in a single layer. Cook for 2-3 minutes on one side, flip, and cook for another minute. Remove from skillet and set aside.
- Add the remaining 2 tablespoons of butter to the same skillet. Add minced garlic and sauté for 30 seconds.
- Pour in the heavy cream and stir to combine. Let it simmer for a couple of minutes. Add lemon juice, salt, pepper, and paprika.
- Return the cooked shrimp to the skillet, stirring into the creamy sauce. Simmer for another minute.
- Fluff the rice: Once cooked, let the rice sit, covered, for an additional 5 minutes. Uncover and fluff with a fork, stirring in chopped parsley.
- Serve: Spoon the herb rice onto plates, topping with creamy garlic butter shrimp and drizzle with sauce. Garnish with lemon wedges and parsley.
