Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • Fresh parsley, chopped
  • Paprika
  • Lemon wedges for serving

Instructions

  1. Rinse the rice under cold water in a fine-mesh strainer.
  2. Cook the rice: In a medium-sized saucepan, bring 2 cups of chicken broth to a boil. Add the rinsed rice, stir, cover, and reduce heat to low. Let it simmer for about 18-20 minutes.
  3. Sauté the shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp in a single layer. Cook for 2-3 minutes on one side, flip, and cook for another minute. Remove from skillet and set aside.
  4. Add the remaining 2 tablespoons of butter to the same skillet. Add minced garlic and sauté for 30 seconds.
  5. Pour in the heavy cream and stir to combine. Let it simmer for a couple of minutes. Add lemon juice, salt, pepper, and paprika.
  6. Return the cooked shrimp to the skillet, stirring into the creamy sauce. Simmer for another minute.
  7. Fluff the rice: Once cooked, let the rice sit, covered, for an additional 5 minutes. Uncover and fluff with a fork, stirring in chopped parsley.
  8. Serve: Spoon the herb rice onto plates, topping with creamy garlic butter shrimp and drizzle with sauce. Garnish with lemon wedges and parsley.
