Description

A refreshing, zesty treat with a balance of creaminess, crunch, and vibrant color, perfect for any season.

Ingredients

Scale
  • 2 cups cucumbers, thinly sliced
  • 2 cups carrots, grated
  • 1 cup plain yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish (optional)

Instructions

  1. Prepare the vegetables by washing, slicing, and grating the cucumbers and carrots.
  2. Make the dressing by whisking yogurt (or sour cream), mayonnaise, apple cider vinegar, and sugar in a bowl until smooth.
  3. Mix the sliced cucumbers and grated carrots into the dressing, adding salt and pepper.
  4. Taste the salad and adjust seasoning as needed.
  5. Chill the salad in the fridge for at least 30 minutes before serving.
  6. Garnish with fresh herbs before serving.

Notes

Consider adding different veggies, nuts, or herbs for a personal twist. Can be made a day ahead; just add salt before serving to keep crunch.
