Ingredients
8 oz pasta (penne or rotini work great)
2 chicken breasts, cooked and shredded
4 slices bacon, chopped and cooked crispy
1 cup corn (fresh, frozen, or canned)
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 garlic cloves, minced
Salt and pepper to taste
Chopped parsley for garnish
Instructions
Cook pasta according to package directions; reserve 1/4 cup pasta water.
In a skillet, cook bacon until crispy. Remove and set aside, keeping a bit of the fat.
Add garlic to the pan and sauté until fragrant.
Stir in cream, chicken broth, and Parmesan. Simmer for 3–5 minutes.
Add cooked chicken, corn, and bacon. Stir in pasta and reserved pasta water if needed for creaminess.
Season with salt and pepper, garnish with parsley, and serve hot!
