Ingredients
Scale
- 2 Chicken Breasts (or thighs for richer flavor, or diced tofu for vegetarian)
- 1 Cup Rice (long-grain white or jasmine recommended)
- 1 Cup Chicken Broth (or vegetable broth for vegetarian version)
- 1 Cup Heavy Cream (or half-and-half, or coconut milk for dairy-free)
- 1 Tablespoon Olive Oil (or butter for richer flavor)
- 1 Onion, Chopped (or shallots for milder flavor)
- 2 Cloves Garlic, Minced (or roasted garlic for a sweet flavor)
- Salt and Pepper to Taste
- Parsley for Garnish (Optional)
Instructions
- Prepare your ingredients by gathering all items and chopping the onion and mincing the garlic.
- Sauté the aromatics by heating olive oil in a skillet, then add onion and cook until translucent. Add minced garlic and cook for an additional minute.
- Cook the chicken by seasoning breast with salt and pepper, then searing them in the skillet until golden brown. Set aside.
- Toast the rice in the same skillet for about 2 minutes, stirring frequently to infuse flavors.
- Add chicken broth and bring to a boil. Reduce to simmer, cover, and cook until the rice is tender, usually 15-20 minutes.
- Stir in the heavy cream and let it simmer for 2-3 minutes until creamy.
- Combine the chicken with the creamy rice and let it simmer for an additional 5 minutes. Serve warm.
Notes
For variations, consider adding lemon zest, chipotle pepper, sautéed mushrooms, or even cheese to enhance flavors.
