Ingredients
2 tbsp olive oil (or oil from sun-dried tomatoes)
1 lb chicken breast, cut into ¾–1 inch pieces
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
2 tbsp butter
2 cloves garlic, minced
1 cup chicken stock
1 cup heavy cream
16 oz gnocchi
1 tsp smoked paprika
⅓ cup sun-dried tomatoes, chopped
½ cup grated parmesan cheese
2 cups baby spinach leaves
Instructions
Heat olive oil in a large skillet over medium-high. Add chicken, season with Italian seasoning, salt, and pepper. Sear until browned, then remove from pan.
Add butter and garlic. Sauté briefly, then pour in chicken stock and cream. Stir in paprika and bring to a simmer.
Add gnocchi and cook for 4–5 minutes, stirring occasionally.
Stir in sun-dried tomatoes, parmesan, and spinach. Add chicken back to the pan.
Simmer until sauce thickens and spinach wilts. Serve hot.
