Ingredients

  • 2 (15 oz) cans canned corn
  • 8 oz cream cheese, softened
  • 1/2 cup (1 stick) butter, melted
  • 1 cup sour cream
  • 2 large eggs, beaten
  • 12 tablespoons sugar
  • Salt and pepper to taste
  • 1 cup shredded cheese, for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with non-stick cooking spray or butter.
  3. In a large mixing bowl, combine the softened cream cheese and melted butter until smooth.
  4. Add the sour cream, beaten eggs, sugar, salt, and pepper to the mixture and stir until well combined.
  5. Drain the canned corn and fold it into the mixture.
  6. Pour the mixture into the prepared baking dish, smoothing the top with a spatula.
  7. Sprinkle the shredded cheese generously over the top.
  8. Bake for 45-55 minutes or until set and the cheese is golden and bubbly.
  9. Allow to cool for about 10 minutes before serving.

Notes

For a lighter option, consider using reduced-fat cream cheese and Greek yogurt instead of sour cream. Leftovers can be reheated in the oven or microwave.
