- 2 (15 oz) cans canned corn
- 8 oz cream cheese, softened
- 1/2 cup (1 stick) butter, melted
- 1 cup sour cream
- 2 large eggs, beaten
- 1–2 tablespoons sugar
- Salt and pepper to taste
- 1 cup shredded cheese, for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with non-stick cooking spray or butter.
- In a large mixing bowl, combine the softened cream cheese and melted butter until smooth.
- Add the sour cream, beaten eggs, sugar, salt, and pepper to the mixture and stir until well combined.
- Drain the canned corn and fold it into the mixture.
- Pour the mixture into the prepared baking dish, smoothing the top with a spatula.
- Sprinkle the shredded cheese generously over the top.
- Bake for 45-55 minutes or until set and the cheese is golden and bubbly.
- Allow to cool for about 10 minutes before serving.
Notes
For a lighter option, consider using reduced-fat cream cheese and Greek yogurt instead of sour cream. Leftovers can be reheated in the oven or microwave.
