Snack smart with these fruity, crumbly bars that pack a punch of flavor. Layers of buttery oats sandwich a sweet-tart cranberry-peach filling, finished with a bright orange zest glaze — perfect for meal prep or midday munching.
Ingredients
Base & Crumble:
1½ cups oats, 1 cup flour, ½ cup brown sugar, ½ tsp cinnamon, ½ tsp salt, ¾ cup cold butter (cubed)
Filling:
1 cup cranberries, 1 cup chopped peaches, ⅓ cup sugar, 1 tbsp cornstarch, 1 tsp orange zest
Glaze:
½ cup powdered sugar, 1–2 tbsp orange juice, ½ tsp orange zest
Instructions
Mix oats, flour, sugar, cinnamon, salt, and butter until crumbly.
Press ⅔ of mix into a lined 8×8 pan.
Simmer filling ingredients until thickened, then spread over crust.
Sprinkle with remaining crumble and bake at 350°F (175°C) for 30–35 min.
Cool and drizzle with orange glaze.
