Instructions

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, cream butter and sugar until light and fluffy.

Beat in eggs, one at a time. Stir in lime juice, zest, and coconut extract.

In another bowl, whisk flour, baking powder, baking soda, and salt.

Gradually mix dry ingredients into the wet mixture. Fold in shredded coconut.

Chill dough for 30 minutes.

Roll dough into 1-inch balls, then coat generously in powdered sugar.

Place on the baking sheet and bake 10-12 minutes, until edges are just set.
