- 2 hard-boiled eggs
- 1 cup sliced deli meats (ham, turkey, or chicken)
- 1 cup cubed cheddar cheese
- ½ cup creamy ranch dressing
- 4 cups lettuce (romaine or butter lettuce)
- 1 cup cherry or vine tomatoes
- 1 cup cucumbers
- 1 cup bell peppers
Instructions
- Place the eggs in a saucepan and cover them with cold water by about an inch. Turn the heat to high and bring it to a boil. Once boiling, cover the pan and remove from heat. Let sit for about 12-15 minutes.
- Rinse your lettuce under cold water, spin them dry in a salad spinner or pat gently with a towel. Tear them into bite-sized pieces and place in a large salad bowl.
- Dice your cucumbers, slice your tomatoes, and chop the bell peppers into bite-sized pieces.
- Cut or tear the deli meats into strips and cube your cheddar cheese.
- Start by layering the lettuce in the bowl, then artfully arrange the veggies, meats, cheeses, and sliced hard-boiled eggs on top.
- Sprinkle your creamy ranch dressing over the top of the salad or serve it on the side.
