Ingredients
• 3 cups grated fresh zucchini (about 3–4 medium)
• 1 ½ cups granulated sugar
• 2 large eggs
• 2 tsp vanilla extract
• 1/4 tsp kosher salt
• 3/4 cup melted butter
• 3 cups all-purpose flour
• 2 tsp baking soda
• 1 tsp ground cinnamon
• 1 ½ cups mini semisweet chocolate chips
Instructions
Preheat oven to 350°F (175°C). Grease two 9×5″ loaf pans.
In a large bowl, mix sugar, eggs, vanilla, salt, and melted butter until smooth.
Stir in grated zucchini.
In a separate bowl, whisk flour, baking soda, and cinnamon.
Add dry ingredients to wet, mixing just until combined.
Fold in chocolate chips.
Divide batter evenly between the loaf pans.
Bake 50–60 minutes, or until a toothpick inserted comes out mostly clean.
Cool in pans 10 minutes, then transfer to wire racks.
