- 2 lbs large shrimp (16–20 count), peeled and deveined
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- Juice of 2 limes and zest of 1 lime
- 12 yellow corn tortillas
- 2 tablespoons vegetable oil for brushing
- 1 cup mayonnaise
- 1–2 chipotle peppers in adobo sauce
- 1 tablespoon adobo sauce
- 1 clove garlic, minced
- 1 tablespoon fresh lime juice
- Salt to taste
- 3 cups shredded lettuce
- 2 large tomatoes, diced
- ½ red onion, thinly sliced
- 2 avocados, sliced
- ½ cup crumbled queso fresco
- Fresh cilantro and lime wedges for garnish
Instructions
- Marinate the shrimp in a large bowl with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, lime juice, and lime zest for 15-20 minutes.
- Prepare the chipotle mayo by mixing mayonnaise, chopped chipotle peppers, adobo sauce, minced garlic, lime juice, and salt in a separate bowl.
- Preheat the oven to 400°F (200°C). Brush tortillas with vegetable oil and bake for 10-12 minutes until crispy.
- Cook the shrimp in a skillet over medium-high heat for 2-3 minutes on each side until pink and opaque.
- Assemble the tostadas by placing tortillas on a plate and topping with lettuce, tomatoes, shrimp, avocado, queso fresco, and chipotle mayo. Garnish with cilantro and serve with lime wedges.
Notes
For extra spice, increase the amount of chipotle peppers in the mayo. Consider using different toppings like mango or a variety of salsas for twist on this classic.
