Ingredients
• 6 oz boxed stuffing mix (e.g., Stove Top)
• 1/2 cup melted butter
• 4 diced zucchini (about 4–5 cups)
• 3 cooked boneless, skinless chicken breasts, diced
• 1/2 cup shredded mozzarella cheese (optional)
• 1 can (10.5 oz) cream of chicken soup
• 1/2 diced onion
• 1/2 cup sour cream
Instructions
Preheat oven to 350°F (175°C).
In a bowl, mix stuffing mix with melted butter; set aside.
In a large bowl, combine zucchini, chicken, soup, onion, sour cream, and mozzarella (if using).
Stir in half of the stuffing mix.
Pour mixture into a greased 9×13″ baking dish.
Sprinkle remaining stuffing on top.
Bake 40–45 minutes, until golden and bubbly.
Let rest 5 minutes before serving.
