Ingredients
Shawarma Chicken:
1 lb boneless, skinless chicken thighs or breasts
2 tbsp olive oil
2 tsp ground cumin
2 tsp smoked paprika
1 tsp ground coriander
1 tsp ground turmeric
1/2 tsp ground cinnamon
1/2 tsp ground black pepper
1/2 tsp salt
Juice of 1 lemon
Tabbouleh:
1 cup cooked bulgur (or quinoa)
1 cup parsley, finely chopped
1/2 cup tomatoes, diced
1/4 cup cucumber, diced
2 tbsp mint, chopped
Juice of 1 lemon
2 tbsp olive oil
Salt & pepper to taste

Other Components:
4 mini naan or pita rounds, cut into wedges
1/2 cup garlic sauce (store-bought or homemade toum)
Instructions
Cook chicken – Toss chicken with olive oil, spices, salt, pepper, and lemon juice. Grill or pan-sear until cooked through, about 5–6 minutes per side. Slice thinly.
Make tabbouleh – In a bowl, combine bulgur, parsley, tomato, cucumber, mint, lemon juice, olive oil, salt, and pepper. Mix well.
Assemble boxes – In each meal prep container, add sliced chicken, a portion of tabbouleh, naan wedges, and a small container of garlic sauce.
Meal Prep Tip: Wrap flatbread wedges in parchment to keep them from getting soggy.
