- 8 oz pasta (rotini or penne)
- 2 cups cooked chicken, diced
- 1 cup romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Parmesan cheese, grated
- 1/2 cup Caesar dressing
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente, about 8-10 minutes; drain and rinse under cold water.
- Prepare the chicken by shredding or dicing it into bite-sized pieces.
- Chop the romaine lettuce and halve the cherry tomatoes.
- Combine the cooked pasta, chicken, romaine, and tomatoes in a large mixing bowl.
- Dress the salad by drizzling with Caesar dressing and tossing to combine; add more dressing if desired.
- Add the grated Parmesan cheese and toss gently to incorporate.
- Serve the salad in a large bowl, garnished with extra Parmesan if desired.
Notes
For meal prep, store salad in the refrigerator without dressing until ready to serve. Substitute chicken with chickpeas or tofu for a vegetarian option.
