Description

A hearty twist on a classic Caesar salad featuring rotini pasta, tender chicken, fresh romaine, and creamy Caesar dressing.


Ingredients

  • 8 oz pasta (rotini or penne)
  • 2 cups cooked chicken, diced
  • 1 cup romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup Caesar dressing
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente, about 8-10 minutes; drain and rinse under cold water.
  2. Prepare the chicken by shredding or dicing it into bite-sized pieces.
  3. Chop the romaine lettuce and halve the cherry tomatoes.
  4. Combine the cooked pasta, chicken, romaine, and tomatoes in a large mixing bowl.
  5. Dress the salad by drizzling with Caesar dressing and tossing to combine; add more dressing if desired.
  6. Add the grated Parmesan cheese and toss gently to incorporate.
  7. Serve the salad in a large bowl, garnished with extra Parmesan if desired.
