- 4 medium potatoes, diced
- 1 pound smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1 packet ranch dressing mix
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Prep your ingredients: Wash and dice your potatoes into bite-sized chunks.
- Heat the skillet: In a large skillet, heat the olive oil over medium heat.
- Sauté the potatoes: Add the diced potatoes and season with salt and pepper. Cook for about 10 minutes.
- Add the sausage: Stir in the sliced smoked sausage and cook for another 5-7 minutes.
- Sprinkle the ranch dressing mix over the mixture and stir it in.
- Sprinkle shredded cheddar cheese over the top and cover for 3-5 minutes to melt.
- Garnish& serve: Stir and serve hot, garnished with chopped green onions.
Notes
For a vegetarian option, replace the sausage with black beans or chickpeas. Serve with a side salad for balance.
