- 1 cup cottage cheese
- 6 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup chopped vegetables (bell peppers, spinach, onions, etc.)
- Salt and pepper to taste
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your muffin tin by spraying it generously with cooking spray or brushing lightly with oil.
- Mix together the eggs and cottage cheese in a large mixing bowl until well blended.
- Season the mixture with salt and pepper to taste.
- Add the shredded cheese and chopped vegetables; gently fold into the egg mixture.
- Fill each muffin cup about three-quarters full with the mixture.
- Bake for 20-25 minutes, or until tops are golden and a toothpick comes out clean.
- Let the bites cool in the pan for about 5 minutes before transferring to a wire rack.
- Enjoy warm or store for quick meals throughout the week.
Notes
These egg bites freeze wonderfully, just store in an airtight container and reheat in the microwave when needed.
