Perfectly fluffy and cheesy egg bites made with cottage cheese and your choice of vibrant veggies. Ideal for quick breakfasts or snacks!


Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup chopped vegetables (bell peppers, spinach, onions, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by spraying it generously with cooking spray or brushing lightly with oil.
  3. Mix together the eggs and cottage cheese in a large mixing bowl until well blended.
  4. Season the mixture with salt and pepper to taste.
  5. Add the shredded cheese and chopped vegetables; gently fold into the egg mixture.
  6. Fill each muffin cup about three-quarters full with the mixture.
  7. Bake for 20-25 minutes, or until tops are golden and a toothpick comes out clean.
  8. Let the bites cool in the pan for about 5 minutes before transferring to a wire rack.
  9. Enjoy warm or store for quick meals throughout the week.

Notes

These egg bites freeze wonderfully, just store in an airtight container and reheat in the microwave when needed.
