1 lb ground chicken or turkey
1 cup chopped spinach (fresh or thawed & drained)
1/3 cup breadcrumbs
1 egg
2 garlic cloves, minced
1/2 tsp Italian seasoning
4 oz mozzarella cheese, cubed
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
In a bowl, mix ground meat, spinach, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper.
Form small meatballs, pressing a cube of mozzarella into the center of each.
Place on a baking sheet lined with parchment.
Bake for 20–25 minutes or until golden and cooked through.
Serve warm with marinara sauce or enjoy them just as they are!
