Double the portions, double the comfort! These creamy, cheesy broccoli chicken bowls are a hearty and satisfying way to crush your week’s meal prep. With juicy chicken, tender broccoli, and rich cheddar sauce over rice, it’s a feel-good classic made fresh.

Meal Prep Bowls

3 lbs boneless, skinless chicken breasts

Kosher salt & freshly cracked black pepper

4 tbsp olive oil, divided

4 heads broccoli, cut into bite-sized florets

1 double batch cheddar cheese sauce (see below)

6 cups cooked rice or quinoa

Extra shredded cheddar cheese (optional)

Cheddar Cheese Sauce (Double Batch)

2 tbsp butter

4 garlic cloves, minced

4 tbsp flour

1 cup chicken or vegetable stock

1 cup warmed milk

½ tsp black pepper

¼ tsp salt

2 cups (8 oz) shredded sharp cheddar cheese


Instructions

Cook Chicken: Season chicken with salt and pepper. In batches, sear chicken in 2 tbsp olive oil over medium heat, about 5–6 mins per side. Rest and slice.

Roast or Steam Broccoli: Toss broccoli with 2 tbsp olive oil, season, and roast at 400°F for 15 mins or steam until tender-crisp.

Make Cheese Sauce: Melt butter, sauté garlic, stir in flour. Slowly whisk in stock and milk until smooth. Add salt, pepper, and cheese. Stir until thick and melty.

Assemble Bowls: Divide rice, broccoli, and chicken among 8 containers. Pour cheese sauce over top and sprinkle with extra cheddar if desired.
