Ingredients

  • 1 cup crushed graham crackers
  • 1/2 cup cream cheese, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup sugar
  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Gather all your ingredients and line a baking sheet with parchment paper.
  2. In a large bowl, mix shredded carrots, crushed graham crackers, cream cheese, cinnamon, nutmeg, and sugar until well blended.
  3. Cover the bowl and refrigerate for 30 minutes.
  4. Roll the mixture into small balls and place them on the parchment-lined baking sheet.
  5. Melt white chocolate chips and coconut oil in a microwave-safe bowl, stirring until smooth.
  6. Dip each truffle in the melted chocolate and place back on the baking sheet.
  7. Refrigerate for 15 minutes to set the chocolate coating.
  8. Serve and enjoy!
