Instructions
- Gather all your ingredients and line a baking sheet with parchment paper.
- In a large bowl, mix shredded carrots, crushed graham crackers, cream cheese, cinnamon, nutmeg, and sugar until well blended.
- Cover the bowl and refrigerate for 30 minutes.
- Roll the mixture into small balls and place them on the parchment-lined baking sheet.
- Melt white chocolate chips and coconut oil in a microwave-safe bowl, stirring until smooth.
- Dip each truffle in the melted chocolate and place back on the baking sheet.
- Refrigerate for 15 minutes to set the chocolate coating.
