- 1/2 cup unsweetened shredded coconut
- 1 cup rolled oats (gluten-free if needed)
- 1 cup pitted dates
- 1/4 cup nut butter (almond, peanut, or seed butter)
- 1 tbsp chia seeds
- 2 tbsp pumpkin seeds (or chopped nuts)
- 1/2 tsp cinnamon (optional + extra for rolling)
Instructions
- In a food processor, blend oats, dates, and nut butter until a sticky dough forms (45-60 sec).
- Add carrots, coconut, chia seeds, pumpkin seeds, and cinnamon. Pulse 10-15 times until just combined (don’t over-blend!).
