1 lb skinless salmon, cut into 1-inch cubes
1/2 cup brown sugar
2 tbsp maple syrup or honey
1 tbsp soy sauce
1 tsp smoked paprika
1/2 tsp black pepper
Optional: dash of cayenne for heat
Instructions
In a bowl, toss salmon cubes with brown sugar, maple syrup, soy sauce, paprika, and pepper. Let marinate 15–30 minutes.
Preheat smoker or grill to 225°F (107°C). Use applewood or cherrywood chips for mild smoke flavor.
Arrange salmon bites on a wire rack or foil-lined tray.
Smoke for 60–90 minutes, brushing with extra glaze halfway through.
Remove once sticky, slightly caramelized, and flaky. Cool slightly and serve with toothpicks or crackers.
