Ingredients
2 cups pitted Medjool dates
1 cup pecans
⅔ cup pumpkin purée
½ cup unsweetened coconut flakes
4 tsp vanilla extract
2 tsp cinnamon
½ tsp nutmeg
½ tsp ground cloves
Pinch of salt
Instructions
Add dates and pecans to a food processor. Pulse until finely chopped.
Add pumpkin purée, coconut, vanilla, and spices. Blend until mixture is smooth and sticky.
Scoop and roll into bite-sized balls (about 1 inch).
Place on a tray and refrigerate for 1 hour to firm up.
Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.
