4–5 ripe Roma tomatoes, diced
1/2 red onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh basil, chopped
2 tbsp balsamic vinegar
2 tbsp olive oil
Salt and pepper to taste
1 block (8 oz) cream cheese, softened
Toasted baguette slices or crackers for serving
Instructions
Combine diced tomatoes, onion, garlic, and basil in a bowl.
Add balsamic vinegar and olive oil, then season with salt and pepper. Mix gently.
Spread the softened cream cheese evenly on a shallow dish.
Spoon the tomato mixture over the cream cheese.
Refrigerate for 20–30 minutes to enhance the flavor.
Serve chilled with toasted bread or crackers. Enjoy!
