Description

A flavorful and nutritious pasta dish with broccoli, chickpeas, and garlic olive oil, perfect for quick weeknight dinners.


Ingredients

Scale
  • 250g Pasta (penne, rotini, or fusilli)
  • 300g Broccoli Florets (fresh or frozen)
  • 1 can (400g) Chickpeas, drained & rinsed
  • 45 cloves Garlic, minced
  • 60ml Olive Oil
  • ¼ teaspoon Red Pepper Flakes
  • 60ml Vegetable Broth
  • 1 tablespoon Lemon Juice
  • 30g Grated Parmesan Cheese (optional)
  • Salt & Black Pepper to taste

Instructions

  1. Boil Water: In a large pot, bring salted water to a boil.
  2. Add the Pasta: Once boiling, add your pasta and cook according to package instructions until al dente.
  3. Reserve Some Pasta Water: Before draining, scoop out about ½ cup of the pasta water and set it aside.
  4. Drain the Pasta: Drain the pasta, but don’t rinse it!
  5. Prepare the Broccoli: Chop into bite-sized florets if using fresh broccoli.
  6. Cook the Broccoli: In the same pot, add a splash of olive oil over medium heat, toss in the broccoli and cook for about 3-4 minutes.
  7. Add Garlic: Toss in the minced garlic and sauté for another 1-2 minutes.
  8. Incorporate Chickpeas: Add the drained chickpeas to the pan, stirring to combine.
  9. Add Liquid: Pour in the vegetable broth and reserved pasta water, bringing everything to a gentle simmer.
  10. Season It Up: Add the red pepper flakes, lemon juice, and salt and pepper to taste.
  11. Mix in the Pasta: Add the cooked pasta to the mixture, gently tossing everything together.
  12. Cheese It: Sprinkle the Parmesan on top and stir until melted.

Notes

Feel free to switch up ingredients based on availability. This dish can be made vegan by omitting the cheese.
