- 10 Eggs
- 1/2 cup Milk or Cream
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Chopped Vegetables (bell peppers, tomatoes, onions)
- 1/2 cup Cooked (crumbled bacon or sausage – optional)
- 1/2 cup Chopped Turkey (optional)
- Salt and Pepper to taste
- Non-stick Cooking Spray
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, crack all 10 eggs and whisk them vigorously. Add in the milk or cream, a pinch of salt, and pepper.
- Chop your chosen vegetables and proteins. Sauté the veggies for a few minutes or keep them raw for more crunch.
- Fold in the shredded cheese, veggies, and optional proteins into the egg mixture.
- Grease a standard muffin tin with non-stick cooking spray.
- Pour the egg mixture into each muffin cup, filling them about 3/4 full.
- Bake for about 25-30 minutes or until the egg bites are puffed up and a toothpick comes out clean.
- Let them cool for 5-10 minutes, then gently remove them from the tin.
- Garnish with fresh herbs before serving.
Notes
These egg bites can be stored in the fridge for up to a week or frozen for longer storage. Customize them with different vegetables and proteins as desired.
