Description

A refreshing Greek salad bursting with flavor, featuring fresh veggies, creamy feta, and Kalamata olives, perfect as a light meal or side dish.


Ingredients

  • 1 large cucumber (diced)
  • 1 pint grape tomatoes (halved)
  • 1 green bell pepper (diced)
  • ½ red onion (thinly sliced)
  • ½ cup Kalamata olives (halved)
  • 4 ounces feta cheese (crumbled)
  • ⅓ cup red apple vinegar
  • Juice of 1 lemon
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves (minced)
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt & ¼ teaspoon black pepper
  • ½ cup olive oil

Instructions

  1. Rinse your vegetables under cold water.
  2. Dice cucumber, halve grape tomatoes, dice the bell pepper, and thinly slice the red onion.
  3. Toss together the cucumber, grape tomatoes, bell pepper, and red onion in a large mixing bowl.
  4. Gently fold in the Kalamata olives and crumbled feta cheese.
  5. In a small bowl, whisk together red apple vinegar, lemon juice, Dijon mustard, minced garlic, oregano, salt, black pepper, and olive oil until combined.
  6. Pour the dressing over the salad mixture and gently toss to coat.
  7. Let the salad sit for 15-20 minutes before serving to meld flavors.
