Ingredients

- 1 large cucumber, diced
- 1 pint grape tomatoes, halved
- 1 green bell pepper, diced
- ½ red onion, thinly sliced
- ½ cup Kalamata olives, halved
- 4 ounces feta cheese, crumbled
- ⅓ cup red apple vinegar
- Juice of 1 lemon
- 1 teaspoon Dijon mustard
- 2 garlic cloves, minced
- ½ teaspoon dried oregano
- ¼ teaspoon salt & pepper
- ½ cup olive oil
Instructions
- Prepare your veggies by rinsing them under cold water.
- Dice cucumber and half grape tomatoes, bell pepper, and thinly slice onion.
- Combine all veggies in a large bowl.
- Gently fold in olives and feta.
- Whisk together vinegar, lemon juice, mustard, garlic, oregano, salt, pepper, and olive oil in a small bowl.
- Pour dressing over salad and toss to combine.
- Let the salad sit for 15-20 minutes before serving.
