Description

A refreshing Greek salad bursting with vibrant flavors from fresh vegetables, creamy feta, and tangy dressing.


Ingredients

  • 1 large cucumber, diced
  • 1 pint grape tomatoes, halved
  • 1 green bell pepper, diced
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, halved
  • 4 ounces feta cheese, crumbled
  • ⅓ cup red apple vinegar
  • Juice of 1 lemon
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt & pepper
  • ½ cup olive oil

Instructions

  1. Prepare your veggies by rinsing them under cold water.
  2. Dice cucumber and half grape tomatoes, bell pepper, and thinly slice onion.
  3. Combine all veggies in a large bowl.
  4. Gently fold in olives and feta.
  5. Whisk together vinegar, lemon juice, mustard, garlic, oregano, salt, pepper, and olive oil in a small bowl.
  6. Pour dressing over salad and toss to combine.
  7. Let the salad sit for 15-20 minutes before serving.
