Ingredients

  • Mixed Greens (baby spinach, arugula, spring mix)
  • Goat Cheese, Crumbled
  • Cherry Tomatoes, Halved
  • Cucumber, Sliced
  • Red Onion, Thinly Sliced
  • Avocado, Diced
  • Walnuts or Pecans, Toasted
  • Olive Oil
  • Balsamic Vinegar
  • Salt and Pepper to Taste

Instructions

  1. Wash and dry the mixed greens thoroughly.
  2. Chop larger leaves into bite-sized pieces if necessary.
  3. Chop cherry tomatoes and slice cucumber.
  4. Slice red onion thinly and soak in cold water if desired.
  5. Dice avocado and drizzle with lemon juice to prevent browning.
  6. Heat a small skillet and toast walnuts or pecans for 3–5 minutes.
  7. Layer greens with cherry tomatoes, cucumber, red onion, avocado, and goat cheese in a bowl.
  8. Sprinkle toasted nuts on top.
