Ingredients
- Mixed Greens (baby spinach, arugula, spring mix)
- Goat Cheese, Crumbled
- Cherry Tomatoes, Halved
- Cucumber, Sliced
- Red Onion, Thinly Sliced
- Avocado, Diced
- Walnuts or Pecans, Toasted
- Olive Oil
- Balsamic Vinegar
- Salt and Pepper to Taste
Instructions
- Wash and dry the mixed greens thoroughly.
- Chop larger leaves into bite-sized pieces if necessary.
- Chop cherry tomatoes and slice cucumber.
- Slice red onion thinly and soak in cold water if desired.
- Dice avocado and drizzle with lemon juice to prevent browning.
- Heat a small skillet and toast walnuts or pecans for 3–5 minutes.
- Layer greens with cherry tomatoes, cucumber, red onion, avocado, and goat cheese in a bowl.
- Sprinkle toasted nuts on top.
- Mix olive oil and balsamic vinegar for the dressing; season with salt and pepper.
- Drizzle dressing over salad and gently toss to combine.
Notes
