Every summer growing up, foil packet dinners were our camping ritual—easy to prep, easy to clean, and bursting with flavor. This Hawaiian twist brings in sweet pineapple and smoky BBQ, making it feel like a backyard luau wherever you are. Whether grilled or baked, it’s a recipe that brings sunshine to your plate.
Ingredients
For the seasoning rub + sauce:
1 tbsp brown sugar
1 tbsp chili powder
1 tsp kosher salt
1 tsp garlic powder
1 tsp smoked or regular paprika
½ tsp black pepper
Cayenne pepper, to taste (just a pinch)
¾ cup BBQ sauce (your favorite brand)
For the foil packets:
6 thin-cut boneless, skinless chicken breasts
2–3 cups chopped bell peppers (red, orange, yellow)
2–3 cups chopped fresh pineapple
Chopped chives or green onions, for garnish
Instructions
Preheat grill to medium-high or oven to 400°F (200°C).
In a small bowl, mix seasoning ingredients and combine with BBQ sauce.
Lay out six large sheets of foil. Place a chicken breast in the center of each.
Divide peppers and pineapple evenly among the packets.
Spoon BBQ mixture over everything. Fold foil into sealed packets.
Grill or bake 20–25 minutes until chicken is cooked through.
Open carefully, garnish with chives or green onions, and serve hot.
