BBQ Beef on Texas Toast

Ingredients

2 cups cooked BBQ beef chuck roast, shredded

4 slices thick Texas toast (buttered and grilled)

1/2 cup cheddar cheese, shredded

1 tbsp finely chopped pickled jalapeños

2 tbsp cream cheese (softened)

1 tbsp mayo

Salt and pepper to taste

Optional: sliced red onions or pickles for topping


Instructions

Make the spread: Mix cheddar, jalapeños, cream cheese, and mayo until smooth. Season to taste.

Grill Texas toast in a skillet with butter until golden and crispy.

Warm BBQ beef in a pan or microwave until hot.

Assemble sandwiches: Spread jalapeño cheddar mixture on one slice, pile with BBQ beef, and top with another slice of toast.

Serve hot—with extra napkins and a cold drink!
