Ingredients

  • 2 cups cooked rice
  • 1 cup diced chicken
  • 2 eggs, scrambled
  • 1 cup mixed vegetables (like bell peppers, carrots, and peas)
  • 1/4 cup green onions, chopped
  • 1/4 cup Bang Bang sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by gathering everything you need.
  2. Scramble the eggs in a skillet with a tablespoon of oil, cooking for 1-2 minutes until just set.
  3. Cook the diced chicken in the same skillet for 4-5 minutes or until golden brown.
  4. Add the mixed vegetables and stir-fry for 3-4 minutes until softened.
  5. Stir in the cooked rice, breaking up clumps and mixing everything together for about 2-3 minutes.
  6. Flavor the mixture with soy sauce and Bang Bang sauce, stirring well.
  7. Add the scrambled eggs and half of the chopped green onions, mixing everything for one last minute.
  8. Serve the fried rice hot, garnished with the remaining green onions and lime, if desired.

Notes

Use day-old rice for best results; it fries up nicely without being sticky.
