- 1 cup diced chicken
- 2 eggs, scrambled
- 1 cup mixed vegetables (like bell peppers, carrots, and peas)
- 1/4 cup green onions, chopped
- 1/4 cup Bang Bang sauce
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Prepare the ingredients by gathering everything you need.
- Scramble the eggs in a skillet with a tablespoon of oil, cooking for 1-2 minutes until just set.
- Cook the diced chicken in the same skillet for 4-5 minutes or until golden brown.
- Add the mixed vegetables and stir-fry for 3-4 minutes until softened.
- Stir in the cooked rice, breaking up clumps and mixing everything together for about 2-3 minutes.
- Flavor the mixture with soy sauce and Bang Bang sauce, stirring well.
- Add the scrambled eggs and half of the chopped green onions, mixing everything for one last minute.
- Serve the fried rice hot, garnished with the remaining green onions and lime, if desired.
Notes
Use day-old rice for best results; it fries up nicely without being sticky.
