Juicy, pan-seared chicken glazed in tangy balsamic vinegar rests atop a bed of fresh mixed greens, paired with sweet strawberries, blueberries, creamy goat cheese, and crunchy walnuts. A simple vinaigrette ties it all together for a refreshing, nutrient-packed meal that’s perfect for lunch or a light dinner. It’s summer in every bite—no matter the season.


Ingredients

2 boneless, skinless chicken breasts

1 tbsp olive oil

2 tbsp balsamic vinegar

Salt & pepper to taste

4 cups mixed greens

½ cup strawberries, sliced

½ cup blueberries

¼ cup walnuts, chopped

¼ cup crumbled goat cheese

For the Vinaigrette:

2 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp Dijon mustard

1 tsp honey

Salt & pepper to taste


Instructions

Cook the Chicken: Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side, then add balsamic vinegar and cook 1 more minute until glazed. Let rest, then slice.

Make the Vinaigrette: Whisk together olive oil, balsamic vinegar, Dijon, honey, salt, and pepper until emulsified.

Assemble the Salad: Divide greens into bowls. Top with sliced chicken, berries, walnuts, and goat cheese.

Drizzle & Serve: Pour vinaigrette over salad just before serving.
