Ingredients

  • 360 g cottage cheese (1½ cups, full fat recommended)
  • 4 large eggs (brought to room temperature)
  • 90 g old-fashioned rolled oats (1 cup, not quick oats)
  • 1 ripe banana
  • 80 ml maple syrup (⅓ cup)
  • 1 tsp baking soda
  • 150 g fresh blueberries (1 cup, frozen works too)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl or blender, combine the cottage cheese, eggs, ripe banana, maple syrup, and baking soda. Blend until smooth and creamy.
  3. Stir in the old-fashioned rolled oats and let it sit for about 5–10 minutes.
  4. Gently fold in the fresh blueberries.
  5. Lightly grease a baking dish and pour the mixture in, smoothing it out.
  6. Bake for about 30-35 minutes until the edges are set and the top is golden.
  7. Let it cool for a few minutes before serving.

Notes

This recipe can be made in advance; prepare the mix and store it in the fridge for up to 24 hours before baking.
