Ingredients
For the Chicken
2 boneless, skinless chicken breasts
1/2 cup apple cider (not vinegar)
1 tbsp Dijon mustard
1 garlic clove, minced
1 tsp olive oil
Salt & pepper to taste
For the Sides
1 cup cooked wild rice blend
1 tbsp chopped fresh herbs (parsley, thyme, or chives)
1 1/2 cups green beans, trimmed
1 tbsp olive oil or butter
Finishing Touches
2 tbsp toasted pecans, chopped
2 tbsp crumbled feta cheese
Instructions
In a small bowl, mix apple cider, Dijon, and garlic.
Season chicken with salt and pepper. In a skillet, heat olive oil and sear chicken on both sides until golden. Pour in cider glaze and simmer until thickened and chicken is cooked through (internal temp 165°F / 74°C).
Cook wild rice as directed and stir in fresh herbs.
Steam or roast green beans until tender-crisp. Toss with a touch of butter or oil.
Plate chicken over rice with green beans on the side. Top with pecans and feta.
