Ingredients
½ cup water
2½ tbsp cold butter, cubed
3 tbsp granulated sugar (divided)
Large pinch of salt
½ cup all-purpose flour
½ tsp vanilla extract
1 egg
Cooking spray
½ tsp ground cinnamon
Instructions
In a saucepan over medium heat, combine water, butter, 1 tbsp sugar, and salt. Stir until butter melts.
Add flour and stir quickly until dough forms a ball. Remove from heat.
Let cool 5 minutes. Add vanilla and egg, then beat until smooth.
Spoon dough into a piping bag with a star tip. Pipe 4 churros onto parchment strips.
Spray churros lightly with cooking spray. Air fry at 375°F (190°C) for 10–12 minutes until golden.
Mix remaining sugar and cinnamon. Roll warm churros in the mixture and serve.
